Pavlova Recipe

4 xl egg whites ( room temp )

3/4 cup sugar

pinch of salt

1/4 tsp. cream of tarter

2 tbsp. unsweetened cocoa powder

whipped cream, chopped nuts, fresh berries, ganache or lemon curd to garnish!

Whip egg whites in the bowl of your stand mixer until soft peaks begin to from, about 3 minutes, slowly add the sugar while mixing, so the egg whites wont lose their volume.  Add salt and cream of tarter.  The eggs should be glossy and fluffy with soft creamy peaks.  Carefully fold the cocoa powder into the eggs, leaving swirls!  divide the eggs into 4 equal portions and spoon onto a parchment lined baking sheet.  Bake for 40 minutes at 300 degrees.  Allow to cool in the oven.  Once cooled top with cream and fruit!

We would just love to see you at the workshop, register in the shop!
