Extra Special Dark Chocolate Chip Cookies

When it comes to the Perfect Chocolate Chip cookie, there are so many ways people define their perfect cookie!  Chewy, thin and crisp, dark, underbaked, with nuts and without nuts!  My perfect cookie is buttery, slightly underbaked and loaded with extra dark chocolate. My perfect cookie also happens to have nuts and dried fruit!  I took my favorite chocolate chip cookie recipe, added dried blueberries and toasted almonds and we had a match made in gooey cookie heaven!  I’m team gooey cookie in case you were wondering.  

Chocolate Chip with dried Bluberries & Toasted Almonds

1 cup, plus 2 tbsp. soft salted butter

2 eggs

3/4 cup suger  

3/4 cup dark brown sugar

1 tsp pure vanilla extract  

1 tsp kosher salt  

2 1/4 cups AP flour

1 tsp baking soda  

1 tsp baking powder  

1 cup toasted sliced almonds

1 cup dried blueberries or cherries

in the bowl of your stand mixer cream butter with sugars, salt & vanilla. Add eggs one at a time, beating until just mixed.  Add flour, soda, dried blueberries and almonds and fold together until it’s just mixed.  I love to pop this into the fridge overnight, thanks to Jaques Torres, but I understand if you must scoop and bake right away!   

Spoon tablespoon sized dollops onto a parchment lined baking sheet and bake in a pre heated 350 degree oven for 11-12 minutes.  Devour, with whole milk!

  1. The recipe never says how much chocolate chips, but I went with the almonds and berries and put 1 cup – they turned out great! Thanks for sharing!
