Grilled Lemons & Perfect Chicken thighs.

It’s hot.  It’s summer & my oven only gets turned on when it’s a very last resort.  These days are spent grilling outside!  Chicken thighs are king in my house.  Don’t get me wrong, I love a good steak but chicken thighs are quick and easy and my 5 year old LOVES them.  Recently I had about 3 lemons I had been dying to roast but wasn’t going to flip my oven on.   I threw them on the grill along with my chicken and what happened was pretty exciting.  They didn’t just get grill marks, they cooked the entire way through and the juices carmelized.   I have been grilling lemons all month and squeezing that juicy brown lemon all over my grilled meats has upped my grilling game in a big way!  

Grilled Chicken Thighs & Grilled Lemons

serves 4

cook time 15 minutes  

8-10 boneless skinless chicken thighs

2 tsp olive oil  

1 tbsp onion powder

1 tbsp garlic powder  

1 tsp kosher salt

1 tsp pepper  

3 lemons halved

method

heat at your grill to 425 degrees for 10 minutes.  While it heats rub oil and spices into your chicken.  Place chicken on the hot grill and place halved lemons on the grill.  Watch for hot spots and flare ups.  Grill each side for 5-7 minutes.  Every 3 minutes rotate the lemons by 1/4. Keep them one off the hottest part of the grill so they cook through and don’t burn.  Once the chicken has cooked completely remove from grill and allow to rest for 5 minutes.  I think all meats need a good resting period.  Remove lemons from the grill and squeeze the lemons all over the meat!  It’s just fantastic.
